What the work actually is
Everything is made in the building, so the prep list is real work rather than a line on a job description. The mozzarella is made here. The sauces are made here. The bread pudding is made here, and then it turns up again inside a burger and inside an iced latte. The soft serve comes off a machine in the building. None of that happens by itself.
The kitchen is open to the room. Guests can see the pass, which means the standard is visible at all times. That suits some people enormously and others not at all, and it is worth knowing which you are before you apply.
What the day looks like
The brunch board runs to 4 PM Friday through Sunday, and to the 1 PM close Monday through Thursday, when the room reopens at 5. The full lunch and dinner menu runs alongside brunch, which means the line is cooking eggs and hanger steak at the same time, genuinely good training, and not for everyone.
Weekday service is split: mornings through early afternoon, then a break, then evening. Friday runs straight through. Weekends are one long service.
